"Dice José López Pacanis, de la marca de salsas artesanales Bachaca, que existe un grupo de WhatsApp en el que están las marcas de picante, que han empezado un movimiento artesanal –con el picante en diferentes grados como protagonista– en esa materia en Colombia: habla de Codi, Ay María, Capitán Canalla y Monte Rojo, entre otras. Cada una tiene su historia, sus búsquedas tanto de sabores proporcionados por los ajíes como de los mejores maridajes entre estos y otros productos locales colombianos (algunos con frutas y hasta con chocolate).
Estas nuevas salsas han encontrado, durante el 2020, nuevas formas de llegar a un público que en muchos casos tuvo que volcarse a la cocina por la necesidad de estar en casa. Y se han convertido en insumo o complemento de muchas recetas.
Por otro lado, a medida que evolucionaba la forma de enfrentar la pandemia en los restaurantes, además de domicilios, estos fueron sacando a la venta elementos que conformaban sus recetas, entre ellos las salsas. Desde Popsy, con sus salsas dulces para decorar helados, hasta Crepes & Waffles empezaron a ofrecer sus salsas al consumidor. Y no solo los de cadena.
Un ejemplo puede ser Rey Guerrero, de cocina del Pacífico, que sacó a la venta su ají y su pesto de hierbas de azotea –con los sabores que identifican a su tierra–. “Comenzamos a hacerlas con la pandemia, para que las personas tuvieran la posibilidad de sazonar sus platos con las hierbas que utilizamos en el restaurante. Siempre nos pedían que les vendiéramos un poco de alguna de las salsas con las que hacíamos platos. Mi esposa me dijo que hiciéramos algunas salsas para vender y mitigar un poco la dificultad por la cuarentena y las ventas bajas, y sacamos esas líneas que han tenido buena acogida”.
Además, Guerrero observa que “la gente en Colombia está abriendo muchísmo más el gusto por los sabores fuertes, entre ellos el picante; el que hacemos de hierbas es muy aromático y pica, pero no te desespera el picor, es muy rico, pega con todo”.
Tal vez sea la hora de salir de las salsas básicas de un sitio de cadena, la de tomate, la mayonesa y la mostaza, y empezar a explorar sabores. ¡Por qué limitarse! Es tiempo de explorar sabores y marcas como Bachaca y MonteRojo, cuyas historias coinciden en este delicioso objetivo.
MonteRojo, de las salsas a los snacks
La génesis de MonteRojo –ahora marca de salsas y snacks prémium– fue la reunión de un grupo de amigos para cultivar ajíes en una finca en Sopetrán, Antioquia. Tenían un famoso ají, el bhut jolokia -que en el 2014 estaba clasificado entre los más picosos en la escala de Scoville, que clasifica el nivel de picante-. “Era la finca de la abuela de un amigo –dice José Ricardo Betancur, fundador de la marca y de la empresa Vector Foods–. Cuando salió la primera cosecha, una de las madres tenía recetas y empezamos a hacer salsas picantes caseras”.
De ahí salió una BBQ y una de maracuyá y bhut jolokia. Seis años después, la producción se ha vuelto más industrial, y curiosamente los llevó a los snacks. “Antes de esto, yo era comisionista de bolsa –recuerda Betancur–. Decidí emprender y en una semana pasé de la bolsa a preguntar en las tiendas: ‘¿Usted ya conoce salsas MonteRojo?’. Ofrecíamos la degustación con chorizo, pero había que comprar dos libras para vender diez salsas.
Entonces, buscamos algo más económico. Vimos unos nachos sin gluten, solo de maíz, le pedimos al productor que los hiciera con sal marina en lugar de sal común y fueron un hit. La gente nos compraba las salsas, pero preguntaba por los nachos, y decidimos hacer los nuestros. Así entramos a los snacks”.
Hoy, las salsas son el 10 por ciento de su negocio, pero no renuncian a ellas, “el mercado va a crecer”, dice Betancur. Por lo pronto mantienen sus ya conocidas salsa de maracuyá y bhut jolokia, la BBQ con el ají Trinidad scorpion y la de ajo con ají habanero."
